Borderlands {March 29}


One of my favorite Mexican treats ever since I was a little girl is Elotes. Elote means corn in Spanish but this snack is more than just corn on the cob. It consists of corn, Mayo with a touch of lime, Mexican cheese, and this chili paste that tastes amazing! I used to crave these so bad when I lived in NH and Dallas. As a kid, we could only get them on the cob which was a total mess. But now they are more commonly found "en vaso." And you can even get them on this side of the border now too :)


Borderlands is an ongoing photography project that features anecdotes from our life in the Rio Grande Valley of Texas.
